From India with love

My husband and I love the flavors of India. The sweet naan, the depth of the sauces and the endless veggie options. We recently found an Indian store near our home that sold all the awesome spices we couldn’t find at the grocery store. We Stocked UP! So far we’ve made Kashmiri, Shakshuka, Butter Chicken (but no chicken, only veggies), Dhal, and the list goes on. 239 Beans Chili

Why can you only put 239 beans in your chili? Because if you put one more, it would be too farty! 🙂 I kid! But adding beans to your chili is an excellent way to have a well round meal. I use whatever I have on hand, it may be white beans, red beans black beans, they all taste good. I also love corn in mine. To each his own.

Ingredients

1 Large Onion, chopped
5 Cloves of garlic, chopped
1 Bell pepper, finely chopped
3 Sprigs of Thyme
1 Bay Leaf
4 Tbsp Oil of choice
1 14 oz Can of Fire roasted Tomatoes
2 15 oz Cans of beans, White, Red, Pink, Black, Pinto whatever you like
1 Bag or Can of Sweet corn
1 Tbsp Smoked Paprika
1 Tbsp of Chili Powder
2 Tsp Cumin
1 Tsp Oregano
1 Tsp Cocoa powder (Chocolate makes Everything better)
Salt and Pepper to taste

Saute first 7 ingredients til onions are softened and golden. Add everything else in with a 1 cup of water, cover and let simmer on medium heat for about 20 minutes. Taste and adjust seasonings to your preference. I like to serve it with a dairy free cheese, chopped green onions and sliced avocado. Enjoy!!

Finger Lickin’ Good!

There’s something to be said for a bucket of wings for a meatatarian. Finger lickin’ Goodness! But don’t despair if you are missing some deep fried goodness. I have a recipe that you are absolutely love! And I mean LOVE! This is a basic recipe that can be used for any things. It’s a base of chickpeas and tapioca flour that can literally be molded into different things. Think of the traditional recipes like Chicken Parm, Chicken fried Steak with gravy and mashed potatoes, Chicken and Waffles, what’s missing is a carrier for the sauce. You must have a carrier for the sauce. Try this to fill that void.

Chicken-less Chicken Wings and Cutlets

1 Can of Chickpeas (save the liquid for egg-less meringues)
1/4 Cup Vegetable broth
2 Tsp Poultry seasoning (sage, rosemary, thyme, nutmeg, marjoram)
1/2 Cup Tapioca Flour and additional for rolling wings in before frying or baking
1/2 Tsp Salt and pepper, add to taste
Oil of choice for frying
Wing or jerk sauce or whatever sauce you would like to

Puree all Ingredients in a food processor except oil. Taste to make sure salt and pepper are enough and to your liking.

Heat oil to the point when you drop a few drop of water in, it sizzles away. Use an ice cream scoop to scoop out uniform balls and place on a plate of tapioca flour and cover ball with flour. Roll balls out to the shape of a ‘Wing’ and let sit so flour soaks in a bit. Fry for 8 to 10 minutes, flipping as needed. When they are still hot, you would want to toss them in your favorite sauce like wing sauce or jerk sauce to really enjoy them!. If you are turning them in to Chicken Parm, make sure to not make the patties too thick because they taste a little pasty from not being cooked inside when the outside is down. By Failing to Prepare, You are Preparing to Fail! – B. Franklin

Making a grocery list is a big deal in our house. Everyone has their favorites that they want added, there are the staples that we use in most dishes each week and then any items that I need to try out new recipes. There are things that I buy weekly, monthly and yearly. I use a Google app called Keep. It allows me to make a running list and there are boxes that you can check and uncheck to populate your list but then when you buy it, it can be checked off til the next time you need to add it back to your list. You can even set reminders for the list to pop up to remind you to do something. It can be color coded for the different stores you visit. I usually only buy organic produce and believe or not, Costco has a large variety of organic produce, vegan and plant based items. On a Costco run, I buy garlic, onions, potatoes, mushrooms, corn, rice, lemons or limes and frozen berries and whatever else looks good. I make my own household cleaner, so when I see the vinegar I think there, I’ll pick up a jug or two of that along with the other secret ingredients. So today, I am going to give you my two secret recipes for household cleaners that Really Work!! They both involve vinegar and other everyday household items.

The first one is a bath, shower, chrome and window cleaner. You take equal parts of Vinegar and Dawn dish soap together in any size container. It must be Original Blue Dawn dish soap and I find Heinz Vinegar works the best. I make two large jugs at a time by keeping the empty vinegar bottle from the last batch, pouring off half the vinegar and then filling them both up with the Dawn, which is why the Costco size of dish soap comes in handy. You shake the mixture up and put into a spray bottle the you spray down you shower and let it sit all day or over night. I have hand shower hoses so it makes it super simple to rinse but you can also just use a small container to rinse down your shower walls and doors.

NOW for the windows, this is a cheat method but it is so fun to watch the magic happen. When you KNOW it is going to rain, you spray down your windows and let nature do the rest! Simple, right?! You will watch the dirt just side away. You could also get the hose out but that seems like a lot of work!

The second cleaner is a floor and counter cleaner that works wonderfully on laminate floors. I have been trying for about 4 years to find a cleaner at the store that doesn’t leave a sticky residue and only look good for about 10 minutes and I totally stumbled on it out of desperation. This one has a longer prep time but once you make it, it will last you quite a while. So you will need a large bottle of vinegar, 12 lemons, a cinnamon stick or anything that you like the smell of like cloves, rosemary, lavender etc, a large container, like a gallon milk jug or the vinegar jug and a carrot peeler. Peel the lemons and put the peels into the container along with the cinnamon and cover with vinegar. You will let this mixture set for two weeks. If you would like it to be ready faster, I have read that people heat up the vinegar and pore over the peels but the thought of vinegar steam filling my house turned me off so I’ve never tried it. If you did this method, the cleaner would be left to sit over night and ready to use the next day. Once the two weeks have past, you need to remove the peels. I have left them in longer but then the cleaner leaves a film when you use it. No thanks! You the Dilute with water, 1 part vinegar lemon mixture, 4 parts water. I hope you have a chance to try this earth friendly and plant based cleaner!!

All is good in the Neighborhood!

Well, we weathered the storm here in South Florida. It’s a bit of a tree graveyard but the power is back on in our neighborhood so let the cooking begin! Today I am going to make a Vegan Picadillo (Pic-a-dee-yo). It is a delicious and comforting Cuban dish made with ground meat but I am going to use lentils. This is one of those dishes that you have to try it to believe it. The combination of ingredients may surprise you but the end result is Sooooo good! It’s served with white rice, we use basmati because its gluten free but you can use any type you like. Vegan Picadillo 1/4 Cup Olive oil 1 Large White Onion, chopped 8 cloves of Garlic 6 Bay leaves 1 16 can of Lentils, you can also use frozen or cook dried in this mixture by adding extra water til lentils are soft 1 14oz Can of Diced Tomatoes (I like fire roasted) 3/4 Cup Raisins 3/4 Cup Sliced Pimento Stuffed Green Olives 1/4 Cup Tomato Paste 2 Tsp Red Wine Vinegar 1 Tsp Chili Powder 1/4 Tsp Cayenne Pepper 2 Tsp Cumin 2 Tsp Capers Heat oil in large pot over medium heat. Add onion, garlic and bay leaves; saute until onions are soft, about 5 minutes. Add lentils and JUICE from tomatoes and enough water to cook lentils if using dried, cover and keep adding water til lentils are soft. Add remaining ingredients and simmer til picadillo thickens, stirring occasionally. Season to taste with salt and pepper. Remove Bay leaves and serve over rice. Time to Dig IN!

Sunshine mixed with a little bit of Hurricane

Here in South Florida, we are preparing for Hurricane Irma to shower us with palm fronds and a slight sprinkle or two. In an effort to be prepared, I’ve put together some meals ideas using things in your pantry with minimal cooking involved. I plan to cook some lime thyme rice, seasoned black beans and make guacamole amoung other things. I can turn those three items into three different meals, a burrito wrap, a Mexican salad and then plate of beans and rice with a side of guac.

Here are some other ideas. Overnight oats could easily be eaten cold or at room temperature with add ins like fresh fruit or dried fruit and nuts. You can turn a torilla, peanut butter and a banana into a breakfast burrito. Cook up some pasta beforehand and put into the fridge then chop up your favorite veggies for a quick pasta salad. Well, I’m off to pull my shutters and prepare a quick exit bag!

Pizza pizza, read all about it!

Sometimes you just want a slice of pizza. A gooey, cheesy slice of pizza. But if you are like my family, wheat and dairy products don’t agree with the belly. I have tried so many different crusts and cheeses and wasn’t satisfied with the texture or taste. I stumbled across two products that were really good. The first one is a frozen ball of gluten free pizza dough and So Delicious shredded cheese. I wasn’t able to capture the finished product because the youngest member of our family, who shall remain nameless, got into it! Here is a picture of the little chef in action!

Yummy for the Tummy black bean burgers

One of the things that people struggle with when going veggie is missing a good burger. No one wants to be the odd ball at a family BBQ or looking like that difficult customer in a restaurant. Fortunately, black bean burgers are readily available but homemade is Always better! Here is a satisfying and delicious burger that even meat eaters would be happy to have!

1 can of black beans, drained
2 tbsp of cilantro
2 green onions
2 cloves of garlic
1 tbsp lemon or lime juice
1 tsp of salt and pepper each
1 tsp cumin
1/2 seeded and diced Jalapeño (can be omitted)
1/2 cup of cooked Quinoa or white or brown rice

Throw Cilantro, green onions, garlic, lime juice, Jalapeño if using and spices in food processor (if you don’t have one, just finely dice each item and put into a bowl and use a fork to mash some of the beans and fold the rest of the beans in) and pulse til finely chopped. Add can of beans and gently pulse a few times til combined making sure to leave some beans in tact. Fold in quinoa. Taste mixture to make sure salt and heat level is to your liking and adjust as needed. Form into patties and refrigerate for 15-30 minutes. Heat a cast iron pan on medium heat and add oil of your choice to cover the bottom of the pan. Place cold patties in the hot pan and leave for 4-5 minutes til burger has a good crust or sear formed then flip and cook 4-5 minutes on other side. These burgers can also be made in the oven at 375° for 15-20 minutes. I like to serve it with a garlic or Chipotle mayo (that will be a recipe for another day), slices of avacodo, Chao sliced cheese (available to Wholefoods) and a bun of your choice. ENJOY 😙
